Kibako is a new contemporary Japanese restaurant, opening on Fitzrovia’s Windmill Street in March 2023.
Our menu will offer unique and refined interpretations of well-known Japanese dishes, blending traditional techniques with modern flair. The restaurant is named after our signature kibako – expertly curated, omakase-style boxes of hand-crafted sushi and sashimi, chosen especially by the kitchen for our diners.
Dishes will combine specialist Japanese ingredients such as Sanpuku nori and Kagoshima Wagyu beef with the highest-quality produce from around the world, including hand-picked Maldon rock oysters and 36-month aged organic Parmigiano Reggiano.
Born in Nepal, Chef Padam Raj Rai trained as a sushi chef in Osaka, Japan before moving to the UK in 2012. He then gained experience working at some of London’s best-loved sushi restaurants, including Tsukiji Sushi at the Westbury Hotel, Roka, Nobu and Sake No Hana.
In 2018, he joined the Hot Stone group as Executive Chef and Co-Owner of our first restaurant, Hot Stone.
Now, Chef Padam will head up the kitchen at Kibako, showcasing his over 21 years of experience as a sushi chef through a succinct menu that embodies the artistry and technique expected of modern Japanese cuisine.
